A Forlorn Little Spotty – A Moment In Time

Today’s Throwback Thursday makes me remember this cute little leopard we came across during a Sunset Safari drive in the Kruger National Park, South Africa.

This was taken within the Shishangeni Concession in the South End of Kruger National Park.  At the moment of this photographic capture (August 2015) , this little bundle of fur was just about 4 months old.  Sad part was that apparently, according to our well trained field/safari guides , they have been seeing it wandering alone for the last week by then.  They presume the Mom had abandoned this one, after losing a couple others from the same litter, to most probably, other predators. 

Sad as it may be, this is the vicious Circle of Life in an African Bush. I do hope this little fellow made it through and is a lot stronger now to fend for itself. Here is one last look at him on that afternoon, as the sun dipped further down the  horizon, he got up and warily walked about for a bit, before we too had to drive off leaving the little leopard behind😢💕.

Apologies for being AWOL again, trying to Blog while Travelling is a bit challenging, especially when You return back HOME, after almost 2 months away.  I am currently enjoying being back in South Africa, with a few more days left before I head back to Bahrain.  The weather in Johannesburg, and even Durban (when I was down there last week), has been amazing!!!!.  

Back in Bahrain, we are fortunate to have an array of Restaurant options, different types of Cuisine , but most specifically all are Halaal Certified Restaurants 👏🏽.  While discovering what Bahrain has to offer, I was so thrilled to Discover our Local SA Nando’s franchise in Seef Mall there.💞 Taste of Home💞

For those not familiar with Nando’s, it is a Flame-Grilled Chicken restaurant , now found Worldwide.  With a Mozambican/Portuguese theme, the main ingredient in their chicken dishes being their famous Nando’s Peri-Peri sauces😋, A must try if you have a Nando’s near you!

So today allow me to share with you, My Version of my Favourite Dish from Nando’s, Their Pita Meals😍.  Pardon the poor Photo quality in this post, as I’m using Photos off my cellular phone.

Tasty Nando's Chicken Strips

  • Servings: 4
  • Difficulty: easy

Ingredients

4 large Chicken Fillets, cut into strips
2 teaspoon crushed garlic OR garlic paste
2 Tablespoon plain yogurt
Tinge of turmeric powder
1/4 teaspoon Chillie powder
1 teaspoon Cumin powder (jeera powder)
2 teaspoon Robertsons Portuguese Chicken spice(or any brand variety)
1/2 teaspoon Robertson Lemon Pepper spice
1 teaspoon salt or to taste
Dash of lemon juice
Dash of Worcestershire sauce
2 Tablespoon Nando’s Lemon n Herb sauce
3 Tablespoon Nando’s Prego Sauce

Method
~prepare chicken fillets as stated above, wash and drain
~ marinate chicken strips for ±30 minutes, with all the above ingredients
~heat olive oil in large pan and add the marinated chicken
~cook on medium heat , cook until chicken is tender and little moisture left
~now add 1/2 cup Mayonnaise followed by 5 Tablespoon of Nando’s Mild sauce (or more according to taste)
~allow to simmer on low but don’t let it dry out, must be saucy
~use for filling pitas/prego rolls/wraps (I used chopped cucumbers, tomatoes and lettuce to fill pitas here as well) or enjoy topped onto Simple Savoury Rice
~ENJOY!!!

NOTES:

~Try above recipe for grilling a whole chicken, and brush regularly with the mayonnaise and  Nando sauce mix.

~Flatten Chicken Breast, follow as in recipe and use for Burgers.

~use different varieties of Nando’s sauce, according to taste preference.

Book Review ~ The Black Box by Michael Connelly

Without going into details of the story and causing a Spoiler Alert for you my dear readers, I would like to briefly give you this Must Read – Recommendation 🙌;)

THE BLACK BOX – MICHAEL CONNELLY

Though this is #18 of the Harry Bosch series, it has been my 1st read starring this character. I Loved it to say the least. A Captivating and very well written Crime/Investigation novel.

Looking into a 20 year old LAPD “cold case”, Harry Bosch, though close to retirement, stubbornly pushes all limits to ensure he gets right down to solving this mystery.

Solving the murder of Danish Photographer Anneke Jespersen, it is the smallest of evidences, that Harry Bosch Finds in the The Black Box, that gets this whole storyline moving ahead.

I loved the brief insights into and during the Desert Storm , also brings to light the many issues surrounding war crimes committed during these wars, that are just left to die down or completely vanish from files😟.

A Novel Full of suspense and twists, just adds to this clever plot. Be prepared to get Addicted to this reading treat👌.

High Flying at Falcon Ridge – Birds of Prey Centre

My Beautiful Country, South Africa, has so many hidden attractions, that I am glad to be sharing it with you my fellow Bloggers and Followers.

On return road-trips back home to Johanessburg from Durban, Imran and I, try to slot in a short stop-over in this Gorgeous and Relaxing parts of South Africa. The most recent getaway to the “Bergs” , took us to the Central parts of the Drakensburg Area. There is so much to do, and this leaves us with the hope of always returning,  like the Falcon Ridge-Birds of Prey Centre.

We had passed this establishment on  countless occasions, but this time we finally pulled into their driveway.

It is a rehabilitation centre for Raptors, and it is an awe-inspiring experience to be up close to these Birds. A Bird Show is held daily at 10:30am , except for Fridays and Public Holidays.  An hour long demonstration, will leave you breathless, as you take in all the very informative info about the birds, and watch as they are sent out to Spread their Wings.;)

Trying to keep up with the birds in flight can be tricky, especially the Falcons, who swoop down like a feathered missile to return back to Greg or Alison offering them a treat for their fantastic aerial displays.

Then out pranced the Black Beauty, a Black Eagle, which I had personally seen for the 1st time ever. He was such a beauty, strong and healthy with shiny black feathers, when it was time for him to spread his wings a bit, he was lucky enough to pick up a strong Thermal Lift, which carried him away to soar high above our heads in a matter of seconds, so high up that he looked like a tiny black speck in the sky.

Then the STAR OF THE SHOW, had to be my all time favourite raptor, the African Fish Eagle.😍😍😍
The call of an African Fish Eagle, synonymous with the African Bush, leaves me Mesmerised. I couldn’t get enough pics of this one, he thrilled the visitors like all the rest had done. Just a pity I hadn’t thought of recording his actual Call as he awaited his turn to spread his wings. So as I leave you all to enjoy pics of my Fav Raptor, don’t forget to make time to stop by at the centre, the next time you are down in the Central Parts of Drakensburg. It was most definitely time well spent👌
