Chai Latte á la Marsay

Masala Chai….Karak Chai…Chai Latte…

By whichever name you prefer to refer to this rather Addictive Cuppa, I guarantee, that from this moment on, YOU will never Buy a ‘Starbucks Chai Latte’ Or a Store bought packet of ‘Masala Tea Blend’.  All you need are a few ingredients to make this perfect, Milky tea, I would say all in 5 minutes of preparation before you sit back and sip, or slurp😜, away at leisure.

So long before Chai Latte had become a hit at Starbucks, I have fond memories of my Abba (My Dad), whipping up this tea once a week, way back when we growing up, for his Mosque Prayer meetings to enjoy with his Friends, and when he always made the perfect cuppa Chai Latte for my Late Mum.  My dad is by no means a ‘hands on Kitchen Fundi’, but when it came to Chai he knew what he was doing, always serving up The Best Chai Latte Ever. He made his Chai with some Lemongrass, which he rescued from our garden years ago during some home renovations, and his plant still holds pride of place on his balcony. Take a look at pic below…

Chai Latte à la Marsay

  • Servings: 1-2 cups
  • Difficulty: easy

INGREDIENTS

1 and 1/4 Cup Full Cream Milk

3 Whole Pods of Green Cardamom

3 Whole Cloves

1 inch Piece of Cinnamon Stick

1 Lemon Flavoured Teabag (I use Dilmah range)

1 Regular Black Teabag

1 and 1/2 teaspoon Condensed Milk to Sweeten, OR to your preference

INSTRUCTIONS

☕️ Add the milk, Lightly Crushed Cardamoms, Cloves and Cinnamon Sticks, to a Microwave suitable Mug/Container and Heat in Microwave for 40 seconds

☕️ Remove warmed milk and add in the Lemon Flavoured Teabag, If using, and heat again until just boiling.

☕️ Remove once again, and remove the Lemon flavoured teabag, and add in the Black teabag to the milk, and boil further in the microwave, until boiled through nicely, keeping an eye on it so it doesn’t spill over.

☕️ Using a Strainer, gently strain away the whole spices and teabag, pouring your almost ready Chai Latte into a cup of choice.

☕️ Stir in the condensed milk to sweeten.

☕️ Lightly dust on a pinch of cinnamon powder.

Now…

Sit Back and ENJOY, Savouring the Subtle, Aromatic Fragrances from the Chai Latte…

~ IF YOU HAVE FRESH LEMONGRASS, YOU CAN USE A FEW SNIPPETS OF IT, INSTEAD OF THE LEMON FLAVOURED TEABAG

Speed Boating and Scuba Diving in Thailand..’Travel Thursday’

A throwback kind of post today here on Foodeva Marsay . This was not too long ago, when Imran and I travelled to Phuket,Thailand.  The one thing you have to do when in Thailand, Is Island Hopping!!!

What you may ask is this about?  Well even though Phuket has lots to see and do, there are many smaller islands surrounding Phuket, and the only way to get to some of these little treasures, is via boat.  We enjoyed, and would recommend, taking a Speed Boat, to see these islands. It is just what the name of the boat suggests….IT IS HIGH SPEED.  Be prepared for an exhilarating , even though BUMPY, ride of you Life.  There are many boating companies that do these daily trips, most of which leave from the Royal Phuket Marina in the Phuket region we travelled to.  Booking is rather easy, and can be done through your hotel concierge desk.

Another Thing to bear in mind, it is going to be crowded!!! Each boat takes about 10-15 people and a towel and swimwear is recommended.  We only saw our sandals again when we returned to the dock at the marina late afternoon.  There will be no need for sandals, as you will be getting on and off the boat at the various island stops. Another thing to remember is lots of sunblock, a waterproof protection for your cameras and if you can Scubs Dive, You would probably like to bring your own Scuba apparatus.  Scuba Apparatus is available on boats if you don’t have one. A light meal is provided with refreshments on the boats.

Allow me to share with you all, these 2 videos I managed to capture, using a GoPro Hero4 , both these videos are best enjoyed on Full Screen Mode😉.

The 1st one is 30 seconds long, just to let you experience what I did, though it was the end of the trip that day. I hope you enjoy.

Bloom by Papatia Feauxzar…Book Review

Happiness is READING!!! I had my share of Double this Happiness about a month back, when the the lovely Papatia Feauxzar, Author of Bloom, messaged to let me know she was sending me a copy of her latest publication for my reading enjoyment.  Three weeks later,’last Saturday’, I received the much anticipated package in Bahrain, all the way from the United States of America.  Greedily sitting down to read my Personally Autographed book, I am kind of a,✨Foodeva Marsay Confession Alert✨, ‘sloth reader’😜, trying to squeeze in any reading I can between my other daily activities, Bloom was certainly one very interesting read. SHUKRAN/THANK YOU kindly dear Papatia for honouring me with your gift, May Allah reward you Ameen!!!

So here goes my Review for this Book, and like all other times, I would prefer not to give away too much of the story, as I hope to intrigue you enough to hopefully get your hands on these Reads😉.

Now no matter how old I get…I am, and will be, a Sucker for a Good Looking Cover on a book.  This one stole my Heart the moment I ripped open the package.  Bloom is actually 3 separate books, which have also been published before, that has now been complied into one Book, under the “Djarabi Collection”  banner.

Book 1

Mistress of the Spices

This story centres around the Protagonist , Aida Mubarak, a young, African American woman. During a reuniting with her long time friend, Nellie at a coffee shop, the entire story ,slowly, unfolds as Nellie is eager to find out all the details about her friend, Aida’s ‘private affairs’.

Book 2

The Hazardous Life of Nilüfer

Protagonist Nilüfer Teecher finds herself in many situations. Her Marriage to 1st Husband Jameel Saree, has many twist and turns, with her willing to do anything for him.  It is during her Life’s Jouney, that Nilüfer meets with Nasir and lastly her psychiatrist, Raj Patel.

Book 3

Oblivion 

This story bounces back to the 1st protagonist we met earlier, Aida Mubarak.  Apart from being the Mistress of Spice, Aïda is now also a Mistress of Tricks. The story unfolds with her trying to keep a huge secret from her Husband Mussa.

My Thoughts

Finally a Muslim based story line, to rival any MILLS and BOONS or 50 Shades of…😉 The Author clearly states “For A Mature Audience Only”, as these story lines are beyond spicy. It almost leaves very little to the imagination during the many steamy bedroom scenes.  What happens behind closed doors, between a man and wife, is one of the many taboo topics that many Muslim women would not dwell into.  We do fail to realise that these are the very essence of how well a marriage is carried forward.  This May Not appeal to many Muslims, But I would urge my readers to give it a read, and if you are uncomfortable with reading those “spicy bits”, you can easily move past those scenes.

With that having been said, There are a lot of other taboo topics that is brought into the stories, Like Polygamy/Polygyny, family, inter-racial marriages, abuse, Divorce and much more.  Papatia does a great job of adding lots of Islamic references to her books, which would appeal to even Non-Muslim readers alike as she does offer explanations as the story goes on.

I loved how the Author had a Foreword and Ending Notes with a Glossary at the end, making it so much easier to understand the many different languages and words that comes through.  Aïda being from West Africa, her native language, as well as bits of arabic that surfaces during the interactions between the characters is nicely added into the glossary.  At times it felt like the author was speaking directly to you, even if via her characters. Having the female protagonist lead these story lines, it was refreshing. Mussa and Jameel were almost unbearable, villains at times, while Raj Patel was totally opposite to both of them.  Having all three stories in one compilation made for much easier follow with each story.

My ENDING NOTES

So apart from the ‘Spicy Scenes’, this compilation is a winner. It definitely lives up-to it’s title, Bloom. Be prepared to BLOOM….be it in your marriage, or by re-kindling the romance in the bedroom, or with other members of your family and friends, Bloom into a Human being that you would be proud of, and Seek to BLOOM within your religion, Be it Islam or whichever you follow, BLOOM in the Eyes of YOUR CREATOR.

I loved this one particular Thought from the book by Aïda.

” Women! Always hating each other for some nonsense, instead of supporting each other or Blooming next to each other”

Easy ‘Finger-Licking’ Lamb Chops/Ribs

It has been for many years now that I have been sharing my recipes, and this particular one I shared ages ago on a Muslim Online Recipe Manager.  I’m amazed that I hadn’t even posted it here for the benefit of YOU, my dear readers and followers. So here is my delayed post on my personal blog here.

I am not very impressed with the original Pic I had posted way back when…. but you can find that pic somewhere in this post.

What I love about this recipe, is that it is so adaptable, you could easily put this dish out onto your dinner table as two seperate dishes altogether.

The more saucier version for the chops would be to make it in a pan on stove top, while for a crisper end result grilling in the oven is best.  The grilling works best for Lamb Ribs, as I wouldn’t advice those being made in a pan, However I have successfully made other lamb cuts as well by grilling in the oven.

Easy 'Finger-Licking' Lamb Chops/Ribs

  • Servings: 3-4
  • Difficulty: easy

INGREDIENTS

500g Lamb Chops/Ribs
1 teaspoon Red Ginger Garlic paste
1⁄4 teaspoon Turmeric Powder
1-2 teaspoon Chillie Powder
1⁄2 teaspoon Salt or to taste
1⁄2 teaspoon Lemon Pepper spice
1 teaspoon dried Mixed Herbs
2 tablespoon Lemon Juice
3 tablespoon Tomato Sauce
1 tablespoon Olive Oil

METHOD

~clean,wash and drain lamb chops,
~marinate with all ingredients
~heat pan/pot on medium heat, add 1 tablespoon ghee (Clarified butter)/Butter
~when this is hot, place in the marinated chops and any excess marinade
~add to this 1⁄4 cup water
~allow to cook on low heat, for ±20-30 minutes ,turning a few times, until meat is tender
~increase heat back to medium setting and allow to fry for a little or until ghee (Clarified butter) and sauce is only coating the chops.
~serve with choice of starch and salad

✏ FOR OVEN GRILLED CHOPS/RIBS…
*Follow recipe Ingredients as above, with addition of the following ingredients

1 teaspoon Coriander/Cumin Powder

2 Tablespoons Honey

2 Tablespoons Worcestershire Sauce.

Method:

*DO NOT add any water.

*Cover with foil and Grill on highest oven setting for 20 minutes, then remove foil, turn lamb chops/ribs a few times until golden and crispy.

✏ normal ginger and garlic paste may be used if the Red variety is not available.
✏Also adjust chillie powder amounts to your liking.
✏ And add more sauce if you want a more saucier end result.

Pappa Roti – Review

At 1st glance it may come across as a regular, same old boring brown bun…But with the 1st bite all your doubts would be put to rest.

It is the most softest, featherlight bun on the inside with a Crispy coffee caramel topping.

You can add any additional topping to the buns, like a toffee sauce/Strawberry Sauce or a Cheese Sauce and you can also opt for adding on extras likes nuts.

So here is my review on this particular brand…. I do know Pappa Roti is now trading in South Africa, and this post is to help my readers make a choice to hopefully go try out this coffee house/cafe; if you haven’t already😜

Did You Know…

Pappa Roti means Father of all Buns… and, 
The woman behind the bun is a beautiful Emirati named Rasha Al Danhani, who is the master franchiser for Middle East. She has since become the master franchiser for North Africa and the Commonwealth of Independent States – the countries that were formerly part of the Soviet Union. 👌

I had visited 2 of this particular Franchise here in Bahrain,
1) Bahrain City Centre Mall
2) Seef Mall Bahrain.

Ambiance~
Both were very smart with darkwood furnishings, with a chic and relaxed atmosphere.

Service~
 Prompt service from friendly staff.

Team this snack with your favourite coffee/ tea/cooler their drink options, a definite winner in my eyes.

My favourite…
I love the combo of sweet and salty, so without a doubt my choice is always with the cheese topping😍.

Is there anyone who doesn’t like Avocados??? If you don’t like these super fruit, you should take a look at these wonderful benefits of Avocado stated in pic format below.

Now there are many ways I love to consume an Avo, and guacamole is one of my Favourite ways to enjoy them. With just a few ingredients added in, this Guacamole is all done “Chop-Chop”😉.

Guacomole raw ingredients

Super Easy Guacamole

  • Servings: 2-3
  • Difficulty: Easy
  • Print

Ingredients

1 Ripe Avocado

1 Lime

Small Red Onion

1 and 1/2 Cherry Tomatoes

2 Stems of Fresh Coriander Leaves

1 Tablespoon Olive Oil

Jalepeño (optional)

Salt and Pepper to Season

Pinch of Crushed Dry Red Chillie flakes

Guacomole2

Instructions

✨ Use a good Chopping Board for the entire preparation.

✨ Start by Chopping the Onions until fine, follow with the Coriander Leaves and Cherry tomatoes.

✨ Follow with the Jalapeño if using, and chop until blended into other vegetables.

✨ Now Scoop out the Avocado, straight onto the chopping board, Drizzle 1/2 Tablespoon Olive Oil and the Juice of the Half the Lime.

✨ Add the seasonings , and keep at chopping all the ingredients until the desired consistency of avocado is reached. * I wanted mine to be a little rustic today, so this one has a slight bit of texture, and not too smooth*

✨ Add the juice from the 2nd half of the lime and the rest of the olive oil.

✨ Taste and Adjust seasoning if need be.

✨ Scoop this now ready Guacamole into a serving dish, drizzle with a little olive oil, a scatter of Chillie Flakes and top with Jalapeño/Coriander

✨ Allow to rest for a little so the flavours may develop.

✨ Enjoy with Tortilla Chips, Nachos, Quesadillas or in Sandwich wraps or as fillers.

✨ You may adjust the type of Chillie/Jalapeño as you see fit, works perfectly without any, or with a stronger chilli option too.

✨ This recipe may also be doubled/tripled for a larger batch.

💥 To Make the Cheese Nachos I have featured in photos… I simply Cut up a Tortilla Wrap into wedges, lightly toast on a frying pan with a drizzle of oil turning to brown on both sides until crisp.  Now add shredded Cheddar cheese (I used a mix of yellow and white cheddar) and top with a Slice of Jalapeño. Place under the grill in oven, for a short moment, to melt the cheese. Easy Peasy!!! ENJOY (Foodeva Marsay)
